"ramen maachi" is a ramen shop about 7 minutes walk on Kawabata-dori street along Takano-gawa river from Demachiyanagi station. As it "white soy sauce(白醤油)" says in big letters on the sign, the ramen here uses white soy sauce in the soup. white soy sauce, unlike normal soy sauce, is white in color and so the soup is clear. The chicken stock based soup is light but at the same time has depth in flavor with a unique taste coming from the white soy sauce.
Today, I ordered white soy sauce ramen topped with egg and Ebi-Bo-Gyoza(dumplings stuffed with prawn, minced pork and vegetables).
The crinkled, fine noodles are cooked al dente and matches well with the white soy sauc soup. The ingredients cha shao(roasted pork fillet) and sungan(Chinese bamboo) and the egg topping absorbs the flavor and is delicious too. Ebi-Bo-Gyoza has a crispy skin with a golden color and the juicy texture of the prawns are exquisite. It is highly recommended.
There are counter seats, table seats and Japanese style raised platform seats where you can take your shoes off.
